A family estate rooted in Noé les Mallets

Located in Noé les Mallets, in the southern part of the Côte des Bar, the Louise Brison estate cultivates 15 hectares of vines, including a single plot of 8 hectares. These vineyards, planted with old massal selections (around 40 years old), grow on complex soils made up of Kimmeridgian marl and Portlandian limestone. This terroir, similar to that of nearby Chablis, gives the grapes natural tension and excellent ageing potential.

Organic viticulture as a tool for precision

Certified organic since 2020, the estate has followed these principles since 2011. Here, organic farming is not an end in itself, but a way to better understand the vine and its environment. Delphine Brulez, who describes herself as rational and methodical, has carried out in-depth work on her plots: soil pits, core sampling, and detailed mapping of soil types and water flow. For her, water is essential — without it, the terroir cannot truly express itself in the grapes.

Vintage champagnes, oak-aged and shaped by time

Every champagne at Louise Brison comes from a single vintage and is aged for at least five years. All wines are vinified and matured in oak barrels. Malolactic fermentation is not systematic — it is decided each year depending on the character of the wine. No filtration is carried out, and dosage is adjusted with precision to highlight the wine’s natural balance. Here, time is not just a technique — it is an essential part of the process.

Chardonnay at the heart of a free and distinctive style

In a region traditionally dominated by Pinot Noir, Delphine Brulez offers a different vision of the Côte des Bar. She believes Chardonnay thrives just as well here, supported by the geological link with Chablis. This grape plays a central role in the range, bringing freshness, tension and finesse.
