À l’Aube 2007 perfectly embodies the Louise Brison philosophy: to vinify each year as a testament, without masking atypical vintages, but guiding them toward their full expression.

2007 was marked by an early, summery spring followed by a rainy summer, resulting in a precocious harvest, often deemed premature. And yet, over time, this wine has revealed unexpected depth and maturity, supported by ripe fruit and patient aging.

This champagne is a 50/50 blend of Pinot Noir and Chardonnay, grown on south/southeast-facing clay-limestone slopes at 320m altitude in the Côte des Bar. It was fermented and aged for 8 months in oak barrels, with partial malolactic fermentation, and bottled in June 2009.

The zero dosage highlights the wine’s natural structure and aromatic precision. The result is a round, floral, slightly candied profile with immediate appeal. A champagne of maturity, accessible today, offering a refreshing alternative to more conventional expressions. For discerning drinkers who know that great wines can emerge from misunderstood vintages.
