A collective journey since 1946

Chavost was born in 1946 from the desire of several winegrowers in Chavot-Courcourt to unite their efforts around a common project.

Its name echoes the village's former appellation, serving as a reminder of its local roots. This collective origin continues to shape the identity of the estate, built on values of sharing, solidarity, and a deep connection to the village's lands.

Ten years elsewhere to return differently

Fabian's journey is far from ordinary as he returns to Chavost.

For a decade, he crafted wines across the globe, discovering diverse approaches and comparing various winemaking techniques.

Back in Champagne, he channels this experience into the estate, eager to explore a freer vinification style, based on minimal intervention and a constant quest for the most direct expression of the grape.

Organic practices in the vineyards to reducing inputs in the cellar

The five hectares belonging to the estate have been certified organic since the 2023 harvest, while Chavost supplements its supply with grapes from approximately eleven additional hectares that are not organically certified.

In the cellar, Fabian continues to focus on reducing inputs as much as possible. This approach requires great expertise in winemaking to maintain the balance and stability of the wines while intervening as little as possible.

Champagnes without added sulphites as a field of expression

This philosophy finds its most advanced expression in the range "Et sans sulfites ajoutés !".

The wines are crafted without added sulphites, aiming to reveal a more immediate expression of the grape, the Vintage, and the terroir.

Chavost thus offers atypical, distinctive, and sometimes disconcerting champagnes, intended for those who wish to discover a freer aspect of champagne.

A contemporary approach that, in its own way, extends the collective and independent spirit at the origin of the estate.
