Human-scale winemaking, from vine to bottle

Cyril Banchet represents the third generation of a winemaking family based in Chouilly, at the heart of the Côte des Blancs. Since 2005, he has taken full charge of the estate and manages all tasks alone. His 2.2 hectares are cultivated, harvested, vinified, and bottled by his own hands — no cooperatives, no purchased grapes.

Each cuvée comes exclusively from his own vineyards. Every decision is made parcel by parcel, every blend is conceived tank by tank. This direct connection between the soil and the wine gives Cyril Banchet’s champagnes their sincerity: truly human-scale wines, shaped by a single craftsman who knows every inch of his land.

The Côte des Blancs is undoubtedly the premier terroir for Chardonnay in Champagne. It is home to legendary villages — Avize, Cramant, Le Mesnil-sur-Oger, Oger... — where some of the region’s finest cuvées are born. Salon, Krug, Agrapart, and De Sousa all draw part of their excellence from here.

Within this prestigious setting, Chouilly stands apart. Also classified Grand Cru like its famous neighbours, it is distinct due to its northern position at the entrance of the Côte, and especially for its soils: classic chalk base overlaid with a rarer layer of silt. This configuration yields riper grapes and wines that are more generous and broad, yet still driven by the chalk’s mineral freshness.

Cyril Banchet captures this singular character perfectly in his cuvées — whether it’s the Brut Grand Cru, marked by balance and tension, or his Blanc de Blancs, a crystalline expression of this unique terroir.

Subtle winemaking, in service of the grape

No oak, no artifice: Banchet’s style is all about restraint. The aim isn’t to do too much, but to do it right. Vinifications take place in stainless steel vats with controlled fermentations, preserving the wine’s balance and the Chardonnay’s natural freshness.

Cyril Banchet’s focus is on showcasing the clarity of the fruit, the chalky tension, and the salty length so typical of the terroir. The dosage is delicately adjusted — sometimes barely perceptible — to let the wine speak. Each lot is vinified separately, then blended with precision to maintain the house style’s consistency and accuracy.

The Grand Cru Rosé, crafted by adding a touch of Pinot Noir vinified as red, rounds out the range with a cuvée that is both fruity and taut, indulgent yet always elegant — a characterful wine designed to surprise even the most traditional enthusiasts.
