The Blanc de Blancs is undoubtedly the best-known Champagne blend. It's renowned for its characteristic aromas of finesse, white flowers, yellow fruit and minerality. But when Laure and Mathieu, our winemakers, turned their attention to it, the idea was to renew the genre a little.
With this Premier Cru, the Lahaye family offers us a revisited version. The Chardonnay is expressive in la Sentimentale. It reveals a fine balance between freshness, finesse and delicacy. The characteristic notes of white flowers are present, but give way to slight hints of evolution. The aromas become more complex in a second phase, revealing a light honeyed note and a length that opens on vanilla.
With such characteristics, la Sentimentale presents us with a recurring choice in the Brisson Lahaye range: should we drink this champagne today, or give it time to evolve?
