Well-known to lovers of great Ports, the existence of a solera may surprise many when it is used in Champagne. This method of aging wine consists of successively adding each year's wines to a single vat. Young wines, still bursting with fresh fruit aromas, are blended with wines from previous years. The wines from previous years, more discreet in their aromas, are rich in the patina and concentration typical of wines for laying down.
