The set contains 2 seemingly similar bottles, both 2016 Premier Cru vintages.

The first matured for 7 years on lees before disgorgement, followed by an additional year and a half of refinement in the estate's cellars to impart its unique character. The second enjoyed the same duration of lees maturation in the cellar before being transported near the island of Ouessant, in Brittany. There, it was submerged 60 meters deep and placed on the seabed to age for over a year. Deprived of natural light and subjected to the constant temperature of the Stiff Bay, the Champagne developed a unique freshness. Only the aging environment changes, resulting in a considerable difference, giving the Sea bottle an unexpected freshness and minerality.

This 2016 vintage was crafted with a base of ⅓ Chardonnay and ⅔ Pinot Noir exclusively from the family's Premier Cru vines.
