The "Entre Terre & Mer" box set by André Chemin is ideal for understanding the influence of the external environment on the aging of champagne.

The box contains 2 seemingly similar bottles, both 2016 Premier Cru vintages.

The first matured for 7 years on lees before disgorgement and benefited from an additional year and a half of refinement in the estate's cellars to give it its unique character. The second enjoyed the same maturation period on lees in the cellar before being transported near the island of Ouessant, in Brittany. There, it was submerged 60 meters deep and placed on the seabed to age for over a year. Deprived of natural light and subjected to the constant temperature of the Stiff Bay, the champagne developed a unique freshness. Only the aging environment changes, resulting in a considerable difference, giving the Sea bottle an unexpected freshness and minerality.

This 2016 vintage was assembled on a base of ⅓ Chardonnay and ⅔ Pinot Noir exclusively from the family's Premier Cru vines. In terms of dosage, this champagne has a concentration of 4.6g/l after disgorgement, allowing it to fully express the aromas of this vintage.

André Chemin has been a family House since its creation in 1948. It blends its champagnes in the heart of the Reims mountains.

Today, Sébastian and his wife Eva are at the head of a 6.5 hectare family estate on the Premier Cru hills of the Reims Mountain. Little has changed in 70 years in this family champagne House, which has managed to preserve its love of the vine.
