With Évanescente 2020, winemaker Pascal Mazet offers a bold cuvée of Blanc de Blancs from Champagne.

This champagne is an atypical blend, predominantly with Pinot Blanc and Chardonnay. The Pinot Blanc, very rare in Champagne, provides a generous structure, a ripe and floral expression, while the Chardonnay brings tension and brilliance.

The cuvée is aged for 12 months in French oak barrels, then benefits from a long aging in the bottle on lees for over 3 years. This aging process gives the wine depth, a beautiful fruit density, and a mineral energy.

Dosage in Extra Brut (2 g/L), Évanescente stands out for its precision and tension, without denying indulgence. A rare champagne, produced in very small quantities, ideal as an aperitif or with subtle dishes: raw fish, scallops, aged hard cheeses.

The Pascal Mazet House has been located in the heart of the Reims mountains in the village of Chigny-les-Roses since 1981.

Certified organic since 2009, this family house is distinguished by the care taken in the aging of its wines. It combines vinification in oak barrels with a minimum aging of 5 years for each of the cuvées.

The result is simply splendid organic champagnes!
