This Grand Cru from the Montagne de Reims is a gourmet champagne.
It is made from Pinot Noir (70%) and Chardonnay (30%) Grand Cru. It is blended from 60% wine from the 2017 harvest and 40% wines from previous years aged in barrels.
This wine is worked only with natural yeasts. It is produced partially in enamelled steel vats (55%, to preserve the freshness of the aromas) and in oak barrels from the Champagne forests (45%, for the structure).
It is a wine of balance, between a racy and ample body, ripe and elegant aromas, an underlying minerality and a low dosage (2 g/l) which allows the character of this champagne to express itself.

A true gourmet wine, this champagne is also perfect for your aperitifs.
Aspect: pale yellow and fine bead of fine bubbles.
Nose: is discreet but complex. Notes of very ripe fruit, apple, small red fruits, such as strawberry and raspberry.
Palate: Frank attack, ample, suave wine, with a melted substance, signature of the beautiful maturity of the blended wines. Wine of balance between the body, racy, ample, ripe, elegant aromas, an underlying minerality and a low dosage.

This family-run house, located in Verzenay, produces rare champagnes, vinified only in parcels, all in Grand Cru, dosed in extra brut and vintage.
The wines of the house are quite simply authentic: mostly worked in barrels, with natural yeasts, without fining or filtration, and chaptalization, if nature allows it, is not sought after. The Vignon house is a straightforward, terroir-based champagne for all lovers of gastronomy!
