Philippe Fays is behind this 100% Chardonnay Blanc de Blancs with genuine personality.
This cuvée is made from a terroir of clayey marl in the Côte des Bar, "la côte Saint-Cyre" (Celles-sur-Ource). Here, the vines produce concentrated grapes with a rich texture and a hint of salinity.
This blanc de blancs is vinified in oak barrels with stirring to bring the yeasts back into suspension, giving the wine its rich, buttery texture. Aging for 36 to 48 months on laths adds complexity to the aromas, with candied citrus and spicy notes. The brut dosage (7 g/l) prolongs the rich, buttery texture of this champagne.

Food and Wine pairing: Serve as an aperitif. To accompany a dish, we recommend reserving it for a sea bass fillet with a dash of olive oil, or grilled lobster cooked in lemon butter.
Aspect: light yellow with subtle green reflections. The very fine bead is nourished by very fine bubbles.
Nose: expressive, with roasted aromas.
Palate: rich, buttery texture with melted woodiness. Aromas of candied citrus fruits, spices and a hint of saltiness add elegance to this champagne.
