A brand that didn’t exist before 2021 and, within just a few years, became a name distributed around the world. It’s the kind of story we’ve grown used to in the tech industry. In Champagne, far less so.

Inevitably, I became curious about this unusual phenomenon. And the opportunity finally came while sharing a bottle with some winemaker friends.

Yet on paper, I was somewhat sceptical: a meteoric rise, a strong identity built around increasingly eccentric illustrations, and the promise of natural wine-a little too trendy for my taste.

It was shaping up to be the least promising tasting of 2026.

And then the magic of Champagne happens: behind the cooperative are winegrowers; behind the grapes, a terroir; and in the cellar, a local man: Fabian Daviaux. A man who knows his wines and works like a winegrower, with convictions that go far beyond the label.

The label catches your eye, but it is the quality of the wine that explains why you keep coming back to it. The rest is all about the tasting: a lively conversation, the pleasure of sharing good bottles and enjoying a moment together. Wines to share with friends.

So, if you ask me why we’re bringing Chavost to Champagne Terroir, my answer is simple: for the pleasure of sharing a bottle you can’t wait to introduce to your friends.

The Chavost Estate

Chavost was founded in 1946 when several winegrowers from Chavot-Courcourt decided to join forces around a shared project. Its name comes from the village’s former name, a reminder of its deep local roots.

Fabian then returns to Chavost after an unconventional journey.

For ten years, he makes wine in different parts of the world, discovering new approaches and exploring different ways of winemaking.

Back in Champagne, he brings this experience to the estate with a desire to explore a freer approach to winemaking, based on minimal intervention and a constant search for the purest possible expression of the grapes.

The estate’s five hectares of vineyards have been certified organic since the 2023 harvest, while Chavost supplements its supply with grapes from around eleven additional hectares that are not certified organic.

In the cellar, Fabian continues to explore ways of limiting additives as much as possible. This approach requires considerable winemaking expertise to preserve the balance and stability of the wines while intervening as little as possible.

The wines are made without added sulphites, with the aim of allowing the grapes, vintage and terroir to express themselves as directly as possible.
