Chardonnay ratafia signed Gaston Collard is a liquor wine with flower and vanilla aromas.
Of remarkable quality, this ratafia is made from two parcels of Chardonnay used for the elaboration of the house's champagnes.
The juice obtained after pressing is mutated with fine champagne (60%) to give birth to this champagne ratafia (18%). It is then aged in oak barrels for 36 months. This long stay in barrels allows the wine to concentrate and acquire a superb structure.
This ratafia was neither filtered nor fined. It therefore has a 100% natural colour that will surprise you with its radiance.
The result is a ratafia with a magnificent aromatic concentration. It gives off very pronounced vanilla and flower aromas.
This liquor wine, to be served chilled (between 9 and 11°C) is perfect for the aperitif or for the pleasure of simple tasting.
We also recommend this ratafia to accompany a blue-veined cheese, such as Gorgonzola. You can also serve it with chocolate-based desserts such as lemons or orangettes.
This extremely rare bottle of ratafia (50 cl) is only produced in 100 bottles each year!
Aspect: amber.
Nose: vanilla and flower notes.
Palate: full, long and surprisingly fresh. We can find the same aromas as on the nose.
