The Pinot Noir ratafia signed Gaston Collard is a liquor wine with caramel aromas.


Remarkably high quality, it is made from a single plot of Pinot Noirs. The old vines growing there (40 years old) produce grapes with a remarkable aromatic concentration that permeates this wine.

The juice obtained from the grapes after pressing is mutated with fine champagne (60%) to give birth to this ratafia (18%).

It is then aged in oak barrels for 36 months. This long stay in barrels allows the wine to concentrate and acquire a superb structure.

This ratafia was neither filtered nor fined. It therefore has a 100% natural colour that will surprise you with its radiance.


The result is an extraordinary ratafia, extremely aromatic and full of red fruit flavours. The time spent in barrels gives it a beautiful structure and the caramel aromas typical of a great ratafia.


This liquor wine, to be served chilled (between 9 and 11°C), is perfect for the aperitif or for the pleasure of tasting.


We recommend it served with foie gras or with sweets made with caramel, cinnamon and/or dark chocolate.


Extremely rare, only 100 bottles of this ratafia (50 cl) are produced each year!

Aspect: garnet red.

Nose: caramel notes underlined by a beautiful sweetness.

Palate: black fruit aromas carried by a beautiful and long finish with caramel notes.

This family estate is located on the Grand Cru de Bouzy terroir.

Amandine and Cyril Collard have been making biodynamic champagnes there since 2012. Their vines benefit from the ideal conditions offered by this exceptional terroir, known for the magnificent maturity of its Pinot Noirs.

This confidential estate of less than 2 hectares produces champagnes with a style that combines freshness, vivacity and richness of aromas.
