Stéphane Hardy has signed an atypical cuvée with this champagne for laying down.


This cuvée is made from a blend of several years of harvesting, old family reserve wines dominated by Pinot Noir.

The potential of these reserve wines led Stéphane Hardy, our winemaker, to create a champagne for laying down.


It was therefore kept for 6 years in the estate's cellars before being disgorged, dosed extra brut (3.8 g/l) and then left to rest for another 3 years.

The long ageing gives it a complexity that one usually expects from a vintage champagne. The dominant Pinot Noir grape variety provides the necessary structure for 9 years of ageing. The palate remains fresh and mineral. The years have brought their patina to the wine which develops notes of ripe fruit and some hints of tertiary evolution due to the ageing after disgorgement.


A long-keeping, vinous and evolved champagne for laying down. To be reserved for your finest aperitifs or your gastronomic meals.

There was a time when the fields mattered more than the vines in Champagne and the Hardy house could have never existed.

Today, Stéphane Hardy, who defines himself as "a minimalist peasant", still wears both hats: winemaker in the morning, and farmer in the afternoon. A true connoisseur of his terroir, this committed advocate of organic farming converted all his fields and vines to organic methods in 2012.
