This Selection cuvee is made from 60% of the 2015 harvest and 40% of the 2016 harvest, with a high proportion of Chardonnay (75%), supplemented by Pinot Noir (25%) for finesse and fruitiness.
All Simart Moreau Champagnes are aged for a minimum of 36 months in the cellar before being sold, a sign of quality.

Aspect: A very abundant white foam hides a champagne with a golden robe
Nose: Filled with cooked yellow fruits, vanilla and a thousand flowers honey. The floral becomes yellow with ventilation for a more pronounced complexity.
Palate: The vibrant mouth is pleasantly saline.
The Simart Moreau Champagne is above all a passion for the vine. For 4 generations, the family's winegrowers have succeeded each other taking care of the 4.7 hectares of the Grand Cru classified estate, the highest distinction for a champagne vine.
Since 1974, this family business has been using its grapes to make its own Champagne. Since then, pressing has been carried out using a traditional press. The obtained juices are carefully preserved in the estate's vat room and benefit from an exceptionally long ageing period of 36 months.
Today, Pascal and his son Jean-Philippe are the ones who produce and assemble Simart Moreau Champagnes according to the family tradition.
