Robert Allait's 2019 Sublimis Chardonnay cuvée will seduce you with its freshness and balance.

This brut champagne (8g/L) is blanc de blancs: it is based solely on chardonnay.

This fine and elegant cuvée with an aerial and acidic taste will sublimate your seafood, crustaceans and fish dishes (back of a yellow pollack poached with hollandaise sauce, gilt-head wrapped in foil and julienne vegetables, filet of sole with lemon butter).

Aspect: Golden color, many very fine bubbles, gold reflections

Nose: Elegant, fresh, light aromas of white flowers, generous flavor of citrus fruits, subtle aromas of exotic fruits

Palate: Elegant, aerial, acidulous, notes of white flowers, light notes of citrus, mineral, structured body, good intensity, long-lasting tastes on the palate.
