Cabotine cuvée by Néret Vély is both fresh and complex.
Made from a blend of Chardonnay (60%) and Pinot Meunier (40%), it has benefited from an exceptionally long ageing period of 5 to 7 years before being offered for tasting.
The result is a perfectly balanced champagne with a very low dosage (3 g/l) that highlights the wine's tension and natural energy.
You will be surprised by the complexity of the aromas released by this champagne. It combines with finesse notes of candied citrus fruits (mandarin, orange), brioche and coffee. On the palate, it reveals a lively and firm attack.
A champagne to match with your best aperitifs as well as with your seafood dishes!
Aspect: fine bubbles and a deep gold color with straw reflections.
Nose: beautiful finesse. Aromas of candied citrus fruits (mandarin orange, orange) associated with a touch of brioche and coffee, with hints of smoke.
Palate: tender and firm in attack. Nice liveliness in the mid-palate with crunchy fruit.

Bon champagne équilibré, cependant la bulle manque de persistance.

The Néret family is a real UFO in the Champagne landscape. And for good reason: in the 1980s, the Néret family were dairy farmers and accountants!
But the desire was there and, little by little, the family built up a vineyard with little means but an enormous amount of work. It is with great pride that Carole Néret took over the reins of the business founded by her parents.
Today, she produces champagnes that reflect the family's image and history: atypical and with a strong personality, but always for your greatest pleasure.
