This biodynamic Blanc de Blancs is an intense, elegant and refined champagne.
It is made with Chardonnay from the 2018 harvest (vintage not claimed). This exceptional cuvée is blended from two wines.
The first (78%) was vinified in enamelled vats to preserve all the freshness and natural incision of the Chardonnay. The second (22%) was vinified in oak barrels, which gave it structure and a beautiful aromatic complexity.
This delicate blend has given birth to a perfectly balanced champagne, essential for the elaboration of a cuvée with no added sugar. It is therefore a zero dosage champagne (or brut nature). This Premier Cru champagne benefited from 3 years of cellar ageing to bring its aromas to their peak.
L'Élégance du Val d'Or is an elegant and refined champagne as only the Blanc de Blancs can be without dosage. It develops notes of green apple and minerals. On the palate, it is fresh and very persistent.
A classic aperitif!
Served chilled, it will perfectly accompany your summer aperitifs, but also all seafood or fine fish dishes.
This cuvée has an extremely low level of sulphites (less than 10 mg/l).
Aspect: straw yellow with green highlights.
Nose: intense, elegant and refined, with notes of green apple and minerals.
Palate: fresh with a pleasant acidic note, very persistent with a cooked fruit finish.

An atypical winemaker and an unusual house!
David is not your typical Champagne winemaker as he was a fireman in Paris before deciding to return to his native Champagne region. He has been producing certified biodynamic champagnes since 2015, although his vines have not seen a drop of weedkiller for over 30 years!
Gaiffe Brun is a unique style and craft: 0 added sugar, only champagnes in unclaimed vintages, hardly any sulphites, all handmade and wines aged... to music.
