The first cuvee created by Jérémy Bardiau, the "Préface" cuvee, bears its name well. It is a beautiful introduction to the House's expertise and style.
Blended from Pinot Noir (70%) and Chardonnay (30%) vines from a clay-limestone terroir, the Préface cuvee was vinified for 8 months on fine lees in temperature-controlled stainless steel vats and then aged on slats for at least 24 months.
The result is a rich, fresh and well-balanced champagne with fruity and mineral aromas that goes perfectly with smoked salmon, a filet of pike-perch in almond breading and small seasonal vegetables or simply as an aperitif.
This cuvee is the preface that makes you want to discover the other vintages of this talented young winemaker!
Aspect: Yellow gold color with light yellow reflections, fine bubbles and persistent collar.
Nose: Smoked limestone (Marne calcaire), blackcurrant, liquorice, lemon, peppermint, almond, honeysuckle, cherry, apricot.
Palate: Clean and fresh attack, creamy effervescence. Pulpy and crispy fruity notes underlined by a lemony acidity and fleshy fruits. Rich and balanced with a minty freshness on the finish.

Bardiau Champagne is a family estate of 2.60 ha located in Verpillières sur Ource, in the south of the Côte des Bar.
