The box set « Entre Terre & Mer » (Between Soil and Sea”) by Champagne André Chemin is a perfect demonstration of the environment over win aging.
This box set contain 2 almost identical bottles, both from the plot and the same vintage 2015.
The 1st one has aged during 8 years a half in the winegrower’s cellar.
The 2nd one has been aged for 7 years in the family’s cellar before being moved to Atlantic French coast. There, it has been submerged 60 meters deep and left to rest during à whole year. Naturally protected from the sunlight and exposed to the ocean current, this bottle has developed some really different and unique flavours.
This box set has been designed by Eva & Sebastien Chemin to give the opportunity to truly experience the effect and flavours differences created by 2 different environments.
This vintage Extra Brut 2015 is made ⅓ Chardonnay and ⅔ Pinot Noir all coming from the family’s Premier Cru vineyard and dosed with 4.6g/l of sugar.
The champagne André Chemin has produced only 294 unity of these box set to save for champagne’s lovers!
This box set include two 75cl bottles vintage 2015 and two flutes.
Aspect: golden yellow, beautiful effervescence of lively bubbles that feed a regular cord.
Nose: floral on the attack (notes of acacia) quickly evolving towards a subtle blend of citrus fruits and nutty aromas. A beautiful complexity that exalts with a lemony delicacy. The Mer cuvée is distinguished by a mineral hint and sustained freshness.
Palate: generous and very fresh, remarkable for the elegance of its melted citrus fruits which end with more pastry notes supported by a lemony finish.
