The box set « Entre Terre & Mer » (Between Soil and Sea”) by Champagne André Chemin is a perfect demonstration of the environment over win aging.
This box set contain 2 almost identical bottles, both from the plot and the same vintage 2015.
The 1st one has aged during 8 years a half in the winegrower’s cellar.
The 2nd one has been aged for 7 years in the family’s cellar before being moved to Atlantic French coast. There, it has been submerged 60 meters deep and left to rest during à whole year.
