Everyone knows the brut champagne as it is by far the most sold champagne in the world. But there is another champagne that is becoming more and more popular: the brut nature or zero dosage champagne. In order to understand what a Zero Dosage champagne is and how to choose the best brut nature champagne, let's go back to the making of this mythical wine.

We tend to forget it, but Champagne is one of the northernmost vineyards on the European continent. If this atypical situation has allowed this region to forge wines with a unique identity, it has also had certain consequences on their profile. Indeed, the lack of sun and heat may tend to make the wines more acidic. To remedy this, winemakers have long used the addition of a so-called "expedition liqueur", a mixture of cane sugar dissolved in white wine. It is this dose of sugar added at the end of the production process that determines the type of champagne: brut, sweet, zero dosage, etc.

But this liqueur can also have another use, that of making your champagne sparkling. Indeed, during the elaboration of a champagne, the wine undergoes two fermentations. The first transforms the natural sugar contained in the grapes into alcohol. This is the alcoholic fermentation and it results in a slightly sweet flat white wine. In order to obtain an effervescent wine, the winemaker will add a tirage liqueur composed of yeast and sugar. This addition will trigger a second fermentation, this time in the bottle. The wine is then stirred daily by the winemaker to bring the dead yeast deposits to the neck of the bottle. Once this long process is complete, the wine is disgorged, a step that consists of expelling this deposit by using the pressure of the gas accumulated in the bottle. But with this evacuation, some of the liquid also escapes from the bottle. It is at this point that the expedition liquor is added. It is this liqueur that will determine the dosage of the champagne.

But be careful, the expedition liqueur does not necessarily contain sugar. This is particularly the case for brut nature champagnes (champagne containing between 0 and 3g/l of sugar).


Brut Nature, Zero Dosage, Nature champagne, what is the difference?

Well, quite simply: none. These three terms designate a champagne made according to the same techniques, i.e. without adding sugar to the expedition liqueur. The terms brut nature, zero dosage champagne or even non dosed champagne have become commonplace and are now easily interchangeable. On the other hand, the CIVC (Comité Interprofessionnel du Vin de Champagne), recognises only 3 official denominations: "brut nature champagne", "non dosed champagne" and "zero dosage champagne".


What is the best zero dosage champagne?

It is always ideal to think that there is one champagne that surpasses all others in quality. But as is often the case when talking about wine, it is above all a question of personal taste... And of the winemaker's style! In recent years, many Champagne winemakers have become interested in the potential of non-dosed champagnes.

Indeed, the role of the dosage in the evolution of the wine can be as weak as important depending on the winemaker's desire. Some of the best brut nature or zero dosage champagnes can be complemented by the liqueurs of great wines. These are kept in reserve for many years in barrels or sometimes even in magnums for the most exceptional cuvées. The winemaker thus builds up a library of aromas with which he can play each year. A few months before the dosage, he carries out several tests in order to select the liqueur that will give rise to the desired style.
